I removed the OEM Sirai pressure stat, opting to use a CAL 3300 temperature controller to manage the boiler temps.

Nice Espresso Double Shot
This is a nice double shot of espresso using my Mazzer Super Jolly and Gaggia coffee. The coffee is a home roasted Brazil.
The shot ... all » starts nice and tight but the cone does swing a little bit (but not too bad) and it quickly becomes still. The shot due to the lighting for the video appears lighter and also appears to blonde a little earlier than it did in person. I feel I stopped this shot at a good time.

March 31, '08 - Gaggia Carezza w/PID
This Gaggia Carezza is equipped with a CAL3200 PID to control the brew & steam temperature. The brew temperature is tuned to 200°F.
This shot was pulled using my home roasted beans; Mexican Chiapas roasted to Full City Plus. The beans were ground with a Rancilio MD-50 commercial grinder.
The shot ran a bit long @35 seconds, but the color is good and the taste is OK for stale(ish) beans.

Nov. 21, '08 - PID'd Baby 2nd shot.mov
This is the second video made of a modded Gaggia Baby pulling a shot. The mods include a PID with controls for brew & steam temperature, and a Rancilio Silvia steam wand has been added.
This was a pretty fantastic shot - 2 ounces in exactly 30 seconds, with lots of crema and wonderful flavor. If your coffee isn't this good, it could be!

Gaggia Classic, weak pump? (solved)
Yesterday my Gaggia Classic began to sound different as I made my espresso shots. The sound you hear uccurs when the espresso is made ristretto style, meaning the pump gets to work a little bit harder, but coffee normally begins to pour within 5 seconds.

Makin' espresso
Coffee used was Caffé Faustos "Giubileo"
After grinding the room was filled with the aroma of fresh coffee.
Crema: Rich and foamy, dark hazelnut brown.
Flavor: Creamy and heavy, hints of walnuts and caramel, slight fruity background of peaches (?).
Rating: 5/5
Price paid: € 5.80 / 250g (1 kilo costs € 19.80)

Gaggia Baby Black's Three-minute Cappuccino
Demonstration of a quick cappuccino using a Gaggia Baby Black (AKA Newbaby06) espresso machine. I prepared the coffee, portafilter, and milk in advance. The boiler on this unit is so fast that it's quicker to froth the milk after pulling the espresso shot.

Sept 25, '08 - Gaggia Classic modded with PID & Silvia steam wand.
This machine has a CAL3200 PID that controls the brew and steam temperatures. It also has a Rancilio Silvia steam wand in place of the Classic's OEM parts.
This was the first shot pulled after the mods. The pull was only 20 seconds so I need to make subsequent pulls with coffee ground *just a bit* finer.
